It's Monday! Yeah! Start your week off right with some super yummy Taco Chicken Bowls and a great at-home workout!
1 ½ lbs. Chicken Breasts (you could also use pork or beef, just make sure it will shred!)
1 (16oz.) Jar Salsa
1 (15oz.) Can Black Beans, drained and rinsed (to help remove any excess salt)
1 (15oz.) Can Corn –OR- 2 Cups of Frozen Corn
1 TBS Chili Powder
½ TBS Cumin
1/2 TBS Minced Garlic
½ tsp Dried Oregano
½ tsp Cayenne Pepper
¼ tsp Salt
Pepper to Taste
2 Cups Dry Rice
* Add all ingredients except the rice, cheese and cilantro to your slow cooker. Add ¼ Cup of Water and Mix all ingredient.
* Secure the lid on your slow cooker and cook on low for 8 hours
* Near the end of cooking time, prepare the rice per the package instructions.
* Stir ingredients with a fork to shred the chicken. It should be tender and easily pull apart. Build your taco bowls by placing rice on the bottom, then the taco chicken mix and shredded cheese and cilantro if desired!
